Refreshing Chocho Powered Ceviche

Ingredients: 

1/2 cup of peeled Chocho Beans

1/2 cup of lemon juice 

1/2 cup of orange juice 

1 cup tomato juice (See notes for how to make homemade tomato juice)

1/2 cup of tomatoes on the vine, diced 

1/4 of a red onion, sliced 

1/2 bunch cilantro, minced 

2 tablespoons of olive oil 

Salt and pepper to taste 

Optional: 

 Popcorn to garnish 

Sea salt plantain chips to garnish  

Instructions:

1: Add onion, lemon juice, and salt to taste to a large bowl. Let onion marinate for 5 minutes. 

2: Add peeled Chocho Beans, orange juice, tomato juice, diced tomatoes, olive oil, and cilantro to the bowl. Enjoy as is or with optional add-ons to garnish. 

Notes: 

Homemade tomato juice 

Time: 5 min

Ingredients: 

1 tomato on the vine 

2 cups water

Instructions: 

1: Add water and tomato to a pot and bring to a boil. Cook tomato until its skin begins to peel off. 

2: Once cooked, put tomato into a food processor or blender. Blend until smooth.
