Chocho Cream of Potato

Ingredients: 

1 5.3 oz package of Chocho Beans, peeled

1 lb potatoes, peeled and diced

3 cups of water 

1/4 cup of heavy cream 

1 cup of milk 

1/4 cup of white onions, diced 

1 tablespoon of butter

1/2 of an avocado, sliced  

Garlic powder to taste

Salt and pepper to taste

Instructions:

1: Add butter, diced onions, and garlic powder to a pot on medium heat. Sauté until the onions are tender, about 5 minutes. 

2: Once the onions are tender, add water and potatoes to a large pot and bring to a boil. Cook until the potatoes are very soft, about 20 minutes. 

3: Add peeled Chocho Beans, milk, and half of the boiled potatoes from pot to blender or food processor. Blend until a smooth, thick consistency comes out. 

4: Add heavy cream, salt, pepper, and the blended mixture to pot with the remaining half of the potatoes. Bring to a boil. Cook for three minutes, then serve and garnish with cilantro and sliced avocados.
